- Kosher salt, 3 teaspoon
- Fresh black pepper, 2 teaspoon
- Bone-in, skin-on chicken thighs, 13

- This first step is that you have to pick the skin on chicken thighs to dry with the cooking towel.
- Later place the chicken thighs in a pan make sure you have to place the thighs just in the single layer, rest of them you can use for the 2nd round.
- Now drizzle the kosher salt over the chicken thigh skin side because you have to refrigerate the thighs around 10 hours without uncovered.
- After that use the grill and heat it 325 degree that is normal medium heat. Don’t forget to brush the grill with olive oil.

- Transfer chicken, skin side down, to lit side of the grill. Grill, without grill lid, 4 to 5 minutes or until skin is crispy and grill marks appear. Let stand 5 minutes before serving.
